We love homemade healthy snacks here at LSP, and these cashew, coconut, and chocolate Easter egg gems are no different! You can whip these up in under ten minutes and you are left with the perfect pre-workout snack or post-dinner treat to satisfy your sweet tooth. Mix these babies up today and you’ll be thanking us all week!
1 cup pitted dates
1/3 cup raw cashews
1/4 cup semisweet chocolate chips
1/4 cup unsweetened shredded coconut
1/4 tsp pure vanilla extract
1/8 tsp imitation coconut extract
1/8 tsp salt
In a heavy-duty food processor, pulse together all ingredients 10-15 times. (See below pics for reference.)
Form into Easter-inspired eggs!
