This is a simple recipe for summer-inspired “Larabars” that are perfect for a quick breakfast or fast snack. You only need a few ingredients (I picked all of mine up at Trader Joe’s), which allows for a cheaper alternative than buying pre-made snack bars. Be sure to pit the dates before you throw them in the food processor.
Summer Berry Pie Bars
(makes 8 balls/bars)
- 1/2 cup Medjool dates, pitted
- 1/2 cup dried blueberries
- 1/2 cup dried cherries
- 1 cup raw almonds
Yummy!! My TJ’s didn’t have dates so I substituted prunes and it turned out just fine. They’re itty-bitty but concentrated goodness. 😉
