Summer Heirloom Tomatoes – Two Ways

One of things I love most about summer is the abundance of fresh fruits and vegetables. Prices are inexpensive and farmers’ markets are everywhere, making this the perfect time of year to experiment with produce. I spotted heirloom tomatoes at Trader Joe’s recently and scooped them up.

Not only are they beautiful to look at, but each one has a distinctly different flavor.

Paired with garden cucumbers, fresh basil, raw feta, and balsamic vinegar, you have a perfect simple summer salad. Partnered with hummus, avocado, and a gluten free Udi’s bun, you have a satisfying lunch sandwich. I’ve been avoiding wheat/gluten for various reasons, but feel free to use a whole wheat hamburger bun if you’re not. I recommend a whole wheat over white bun any day, just for the added fiber/nutrient benefits. If you check the list of ingredients on the bun package, try avoiding enriched products, which are stripped of their nutrients.

Alright, let’s dive into the recipes.

Cucumber Heirloom Tomatoe Salad

Balsamic Heirloom Tomato Salad

serves 4

  • 1 lb sliced heirloom tomatoes
  • 1 small sliced cucumber
  • 3 tbsp raw feta, optional (regular feta can be subbed)
  • 2-3 tbsp chopped fresh basil
  • 3 tbsp balsamic vinegar
  • 1 tbsp raw agave
  • 1 tbsp extra virgin olive oil (optional, helps bind vinegar to tomatoes)
  • kosher salt (to taste)
  1. Combine vinegar, agave, oil (if using),and chopped basil in a small bowl, whisking with a fork.
  2. Add tomatoes to a large bowl. Drizzle with balsamic vinegar mixture, tossing to combine. If you’ll be making the Hummus Avocado Sandwich below, set aside 1/4 cup of the tomato mixture (or more if you’ll be making more than one sandwich).Heirloom Tomatoes in Balsamic
  3. Add in the sliced cucumbers and raw feta (if using). Salt to taste.

Hummus Avocado Sandwich with Heirloom Tomatoes

serves 1

  • 1 gluten free hamburger bun (can be subbed with wheat bun if not GF)
  • 2 tbsp hummus 
  • 1/4 cup balsamic heirloom tomatoes (follow preparation details in recipe above)
  • 2 tbsp raw feta, optional (regular feta can be subbed)
  • 1/4 of an avocado, thinly sliced
  1. Layer all ingredients onto bun, close, bite. It’s as simple as that!
