Gluten-Free, Vegan Gingerbread Pancakes with Cinnamon Frosting

Happy holidays Lovelies! I hope you are enjoying the season. Life has been hectic lately, hence my absence from the blog. I am excited and ready for 2014 … and I already have so much planned for this little blog. Stay tuned!

Until then….. do you know what you are eating tomorrow? How about some festive gluten-free gingerbread pancakes? These hearty pancakes are made from cashew meal I found at Trader Joe’s. If you are Trader Joe’s-less, you can make your own cashew meal. Throw raw cashews in a food processor and pulse until a fine meal forms.

I’ve topped these pancakes with a vegan cinnamon frosting and sprinkles (which you can also find in vegan form). Mmmmm…..

Gluten-Free, Vegan Gingerbread Pancakes with Cinnamon Frosting

Pancakes

  • 1/2 cup cashew meal
  • 2 tbsp sucanat
  • 1 tbsp coconut sugar
  • 3/4 tsp cinnamon
  • 3/4 tsp ginger
  • 1/4 tsp baking powder
  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)
  • 1 tbsp maple syrup
  • 1 tbsp blackstrap molasses
  • 1/2 tsp pure vanilla extract
  • cooking spray

Frosting

  • 4 tbsp vegan cream cheese
  • 1 tbsp maple syrup
  • 1/4 tsp pure vanilla extract
  • 1/4 tsp cinnamon
  • dash of nutmeg
  • dash of ginger
  1.  Combine cashew meal, sucanat, coconut sugar, cinnamon, ginger, and baking powder in a large bowl. Stir with a whisk to combine.
  2. In a small bowl, combine flax egg, maple syrup, molasses, and vanilla extract.
  3. Add wet ingredients to dry ingredients, stirring until just combined.
  4. Preheat large skillet over medium heat. Spray with cooking spray.
  5. Drop batter onto heated skillet, 3-4 tbsp per pancake. Cook for 3-5 minutes per side until set.
  6. While pancakes are cooking, combine all frosting ingredients in a medium bowl. Whisk vigorously to combine.
  7. If you would like to get fancy with the frosting, add mixed frosting to a small sandwich bag. (Be sure to roll down the sides of bag before adding frosting- much easier!) Cut out a small corner on one bottom side of the baggy.      frosting in bag
  8. Pipe frosting onto pancakes. Serve immediately! (Frosting will melt otherwise.)
