Happy holidays Lovelies! I hope you are enjoying the season. Life has been hectic lately, hence my absence from the blog. I am excited and ready for 2014 … and I already have so much planned for this little blog. Stay tuned!
Until then….. do you know what you are eating tomorrow? How about some festive gluten-free gingerbread pancakes? These hearty pancakes are made from cashew meal I found at Trader Joe’s. If you are Trader Joe’s-less, you can make your own cashew meal. Throw raw cashews in a food processor and pulse until a fine meal forms.
I’ve topped these pancakes with a vegan cinnamon frosting and sprinkles (which you can also find in vegan form). Mmmmm…..
Gluten-Free, Vegan Gingerbread Pancakes with Cinnamon Frosting
serves 2
Pancakes
- 1/2 cup cashew meal
- 2 tbsp sucanat
- 1 tbsp coconut sugar
- 3/4 tsp cinnamon
- 3/4 tsp ginger
- 1/4 tsp baking powder
- 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)
- 1 tbsp maple syrup
- 1 tbsp blackstrap molasses
- 1/2 tsp pure vanilla extract
- cooking spray
Frosting
- 4 tbsp vegan cream cheese
- 1 tbsp maple syrup
- 1/4 tsp pure vanilla extract
- 1/4 tsp cinnamon
- dash of nutmeg
- dash of ginger
- Combine cashew meal, sucanat, coconut sugar, cinnamon, ginger, and baking powder in a large bowl. Stir with a whisk to combine.
- In a small bowl, combine flax egg, maple syrup, molasses, and vanilla extract.
- Add wet ingredients to dry ingredients, stirring until just combined.
- Preheat large skillet over medium heat. Spray with cooking spray.
- Drop batter onto heated skillet, 3-4 tbsp per pancake. Cook for 3-5 minutes per side until set.
- While pancakes are cooking, combine all frosting ingredients in a medium bowl. Whisk vigorously to combine.
- If you would like to get fancy with the frosting, add mixed frosting to a small sandwich bag. (Be sure to roll down the sides of bag before adding frosting- much easier!) Cut out a small corner on one bottom side of the baggy.
- Pipe frosting onto pancakes. Serve immediately! (Frosting will melt otherwise.)
Happy Holidays!!!
